Meet Chef
Jason Boniface

Jason Boniface's culinary journey is a testament to his passion and dedication. Born just outside Boston, Massachusetts, he spent most of his childhood in New Hampshire before attending culinary school. Graduating at the top of his class, he embarked on a unique culinary journey across the United States, working in various establishments, from Michelin-starred restaurants to food trucks.

 

After about five years of traveling, he returned to Boston and joined Celebrity Chefs Ken Oringer and Jamie Bissonnette. After several years with them, Jason sought warmer climates and relocated to Florida, where he had family and friends.

 

For nearly 7 years, he served as the Executive Chef of Red Door, infusing his heart and soul into creating unique and enjoyable cuisine. In 2019, Jason left Red Door to lead the kitchen at Cob & Pen, infusing his culinary creations with a new lively spin. He has been with Cob & Pen for nearly 5 years now and finds immense joy in his work every day, from interacting with people to crafting new and exciting dishes.

 

This summer, Jason will participate in the opening of Maritime at the new Bowen Yard in collaboration with the owners of Cob & Pen. Maritime will specialize in cold-water oysters and feature an incredible raw bar, fresh seafood from Maine to Florida, hand-cut fries, and a range of excellent meat and vegetarian options. Jason is thrilled about this new endeavor and the opportunity to share his culinary vision with more of Polk County.
